Earlier during one of the "I Smell A Memory" sequences, I had a couple of requests for some recipes that I am just getting around to finding in my files to put here. I think it was Lucy who asked about a short ribs recipe--so here goes!

BRAISED SHORT RIBS JARDINIERE


LARGE BOWL OR PAN
SHALLOW OVEN PROOF PAN
4 LBS LEAN BEEF SHORT RIBS
3 LARGE SCRUBBED CARROTS
2 LARGE PEELED POTATOES
3 STALKS CELERY
1 SWEET ONION
1/2 BELL PEPPER
1/4 C OIL
1 C FROZEN PEAS
FLOUR * BEEF BASE * SEASONINGS

MIX TOGETHER WELL IN THE LARGE BOWL OR PAN: 1/2 C FLOUR * 1 TSP PEPPER * 1 T SALT * 1 T GARLIC GRANULES
1 T PARSLEY * NEXT ADD THE 4 LB OF SHORT RIBS
(MIX AND TURN UNTIL MEAT USES UP ALL OF FLOUR MIX)

BROWN RIBS IN 1/4 C OIL IN A SHALLOW OVEN PROOF PAN, TURN OFTEN UNTIL BROWN ON ALL SIDES
DISSOLVE 2 T BEEF BASE IN 1 QT HOT WATER, ADD SLOWLY TO RIBS IN PAN STIR AND TURN UNTIL WELL COATED, SCRAPING BOTTOM OF PAN
COVER PAN TIGHTLY AND BAKE AT 350 FOR ONE HOUR

MEANWHILE PREPARE JARDINIERE:
CUT THE CARROTS, POTATOES, CELERY, BELL PEPPER INTO JULIENNE STICKS SLICE THE ONION ABOUT 1/4" (RESERVE ALL IN COLD WATER FOR 1 HOUR)

DRAIN JARDINIERE & ADD WITH 1 C FROZEN PEAS TO RIBS
COVER BAKE AT LEAST ONE HOUR OR UNTIL RIBS ARE FORK TENDER & VEGGIES ARE GLAZED

Here's another great recipe for beef ribs or short ribs!

GRILLED BEER BEEF RIBS


3 LARGE BEEF RIBS PER PERSON OR 4 LBS BEEF SHORT RIBS (for 4/5)
BEER MARINADE:
2 CANS FLAT BEER
1/2 C SOY SAUCE
2 T ONION FLAKES * 2 T GARLIC GANULES * 1 T PEPPER
MIX MARINADE INGREDIENTS TOGETHER WELL IN A SHALLOW PAN BIG ENOUGH TO HOLD MEAT

PLACE MEAT IN PAN, TURN SEVERAL TIMES TO COAT WELL WITH MARINADE
SPRINKLE MEAT WELL WITH MEAT TENDERIZER, COVER & REFRIGERATE
KEEP MEAT REFRIGERATED AT LEAST 24 HRS, TURNING SEVERAL TIMES
(MARINADE AND MEAT CAN ALSO BE STORED IN HEAVY, SEALABLE PLASTIC BAG)

COOK ON PREHEATED GRILL, NOT TOO CLOSE TO HEAT, BASTING WITH REMAINING SAUCE (MAY BE COOKED IN BROILER, ALSO)

Hate to read that you are not only feeling off from the after Christmas Bug BUT that you are typing with gloves, that has to be a tough one!!!

Granny, I love short ribs but they are too expensive for me, everything is anymore it seems *sighs*. I read the post a coupld of days ago and did not comment...

Also read the one about the bitch that is harassing you, she tried that same shit with me VIA PM'S however I called her some choice names and told her she had better cease & desist OR I would not let it die, I was NOT kidding her either I would contact my Attorney friend ASAP he is a local Judge as well now and I am sure would assist me OR at least steer me in the right direction...

As well I was in the Medical Field and I do know that she CAN be turned in to her State Board Licensure Department...

This is all FYI in case the shit does NOT stop with her bugging you...

I love Short Ribs, I always used them in home-made Vegetable Soup but they are just to expensive for me now...

There is no way I could type with gloves, I am glad you are able to but sad that you are so cold having to...

I went through a bout with Raynaud's Phenomenon a couple years back and could not do it...

Hi, Reba! It is true that short ribs are expensive, considering how little meat there is on them anymore. You know, while it does not have the "beefy" taste of short ribs, chicken done in that recipe is VERY tasty. I make it often because it is really better for my diet than the beef. Of course, in any recipe you need to use chicken base, rather than beef. 8-)

Raynaud's Phenomenon is what I'm experiencing right now. I've been thinking I'm stuck with it for the rest of the years I have left, especially when it's cold. I was interested to hear that you recovered from it. Did you do anything special?

Interesting to hear that you have had a run-in with the Mz, also. The list seems to get longer all the time. I wonder how she can live with herself. Best she learn how to quick enough--won't be many left very soon.

Well old goofy me having had that GI bug and like I said on my post *it was not a soldier* lol I forgot to tell you that I substitute the Short Ribs with Ground Beef, it works...

Need to be on a diet but need to do a lot of things I don't do, wish I could, I don't drink, don't smoke, don't drug, but damn I eat and all bad stuff, all anymore I tell you. This menopausal shit has really taken me off the chain with eating bad things and feeling no remorse almost??? Oh I forgot to say another vice is potty mouth, that isn't obvious now is it *smiles*

I am going to remember to try the Chicken in place of the Ground Beef, that sounds good. One day I am going to get those Short Ribs again though, oh how I loved them, when my kids came along and my mom was alive, there were six of us to feed and the Short Ribs alone were an arm and a leg...

Now just me & my husband I will try them again one day lol
When I think about it though the reason in part I have not could be is that perhaps I am afraid we would get *spoiled* by their irreplaceable, unforgettable taste, then I could never go back to the Ground Beef lol

Granny Jo, everytime I used to make Beef Stew it was just *bland/flat* maybe you can help me out on that, I had given up on it totally...

Now to that *thing* that has been attacking unprovoked...

No idea why, none at all, nasty persona, just rude and crude with nothing good to say and instead of saying nothing attacks people, makes NO good sense to me at all. I mean I have gotten after people and shit but nine times out of ten they gave me a good reason. I just did/do not get this one I tell you. People like that burn all their bridges as eventually they screw everyone so badly NO-ONE likes them...

OK the Raynaud's, well mine has flared up several times, it is usually quite short lived though, many times it occurs when I am bathing, the water cools the hands & it comes on me, my palms will even turn blue lol...

One thing I have noticed indeed *with mine anyway* stress indeed can/will bring it on, I am also cold all the time, I am on Inderal LA for High Blood Pressure, sometimes I wonder if that is not a contributing factor???

With mine it is NOT painful, many times it can be, as well it can be serious (the actual disease and there is a big difference) BUT my DR said back in 2001 when I first started getting it being as it was the phenomenon and not the disease it was nothing to worry about, she said if it got painful to gently warm it up otherwise just don't worry about it...

Mine is supposedly the phenomenon though not the disease and I was quite careful and exact when I first encountered it as it is so much (can be) anyway in *raking the DR over the coals* as my mom had Buerger's Disease Disease in which that is of the feet *toes* and is much there as *true* Raynaud's is in the fingers and hands...

That is/used to be far more prevalent in men than women but not the case anymore, also my mom was a heavy smoker and that WILL make it stay and get worse, it can cause gangrene, the Burger's so I wanted to make sure that is/was not what was going on in my hands & fingers...

I ramble so Granny Jo, I apologize...

A good friend of mine has the actual disease of it (along with other) conditions that provoke the Raynaud's and her's comes and goes, usually it will take a lot of really cold weather to get hers in motion where she has to wear the gloves...

I sure hope some of my rambling made sense and helped some. How long have you had yours? Let me know, I can share a few other things to try, anything that warms the hands BUT not to fast when doing so as that is bad also...

Back when I drank I also had great joy in a beer and rib recipe. I just didn't combine them except when mealtime came around.

Ummm...sounds yummy.

So, I have a question. A friends mother used to make something called Chicken under a brick. It was so good. Are you familiar with this and do you really put it under a brick?
